South Of The Border Casserole 2 tablespoons butter 1 small onion, chopped 1 (6 ounce) package corn chips, 4 cups, reserve 1 Cup 2 cups grated sharp cheddar cheese, reserve 1 Cup 1 (16 ounce) can chili no beans 1 (16 ounce) can kidney beans, drained 1 (11 ounce) can Mexi-corn, drained In 9x13 inch baking pan, combine butter and onion. Microwave for 3 minutes, stirring once. In bowl, combine 3 Cups corn chips, 1 cup cheese, chili, beans, corn and onion. Cover. Microwave for 8 to 9 minutes. Sprinkle with reserved corn chips and cheese around edges. Let stand for 5 minutes. Makes 8 servings.
