Fannie's Light Cornbread 3 cups self-rising cornmeal 1 cup all-purpose flour 1/4 cup sugar 1/8 teaspoon salt 3 cups buttermilk 2 egs 1/4 teaspoon baking soda 1/2 cup melted shortening Preheat oven to 400. In bowl, combine cornmeal, flour, sugar and salt. In another bowl, combine buttermilk and eggs. Beat lightly. Beat in baking soda and shortening. Add to dry ingredients, blending lightly but thoroughly. Do not overbeat. Divide batter between two greased 9x5 inch loaf pans. Bake for 20 to 30 minutes, or until toothpick inserted into centers comes out clean.
