Turkey Croquettes 2 tablespoons shortening 2 tablespoons finely chopped onion 2 tablespoons all-purpose flour 1/2 cup chicken broth 1 egg, lightly beaten 2 cups ground cooked turkey 1 tablespoon chopped parsley 1/2 teaspoon salt 1/8 teaspoon pepper 1 egg, lightly beaten 3/4 cup bread crumbs Shortening for deep frying In skillet, melt shortening. Add onion. Cook over medium heat for 2 minutes, or until tender. Add flour, stir. Gradually add chicken broth, stirring until thick and smooth. Remove from heat. Add egg. Add turkey, parsley, salt and pepper. Chill for 2 hours. Shape into six balls. Dip into egg. Roll in bread crumbs. In skillet, heat shortening to 365. Fry for 5 to 6 minutes. Drain on paper towels. Serve with cheese sauce.
