Turkey Cheese Enchilada Casserole 1/2 stick butter 3 cups cooked turkey or chicken 1 medium onion, chopped 12 corn tortillas 1 (4 ounce) can chopped green chiles 1 jar taco sauce 4 cups shredded monterey jack cheese 4 cups shredded cheddar cheese 1 (10.75 ounce) can cream of mushroom soup 1 (10.75 ounce) can cream of chicken soup 1 (14 ounce) can chicken broth Preheat oven to 350. In saucepan, melt butter. Add onion. Cook until tender. Add chiles, taco sauce, soup and turkey. Place layer of tortillas into 2 inch-deep casserole dish. Spread alternate layers of soup mixture, tortillas and cheese. Repeat three layers twice more, making sure top layer is cheese. Bake for 30 to 60 minutes, or until cheese is melted. Makes 8 to 10 servings.
