Baked Chicken Parmesan 1 (2 1/2 to 3 pound) broiler fryer chicken, cut up, skinned 3/4 cup mayonnaise 1 cup cornflake crumbs 1/2 cup parmesan cheese 1/8 teaspoon salt 1/8 teaspoon pepper Preheat oven to 350. Brush chicken with mayonnaise. Coat with combined crumbs and cheese. Sprinkle with salt and pepper. Place into 9x13 inch baking dish. Bake for 1 hour, or until tender. Makes 3 to 4 servings. Variation: For Cajun chicken, omit salt. Add 1 teaspoon each ground cumin, and onion powder and 1/2 teaspoon each ground red pepper and garlic powder to mayonnaise, mix well. Substitute 1 1/2 cups crushed sesame crackers for cornflake crumbs and parmesan cheese. Continue as directed. Note: For crisper chicken, place chicken pieces on rack on broiler pan to bake.
