Baked Barbecued Fried Chicken 3 eggs 1 cup water 1/2 cup milk 2 teaspoons salt 2 teaspoons pepper 6 cups all-purpose flour 1/8 cup salt 1 tablespoon pepper 2 tablespoons minced garlic 2 tablespoons dry mesquite flavored seasoning mix 3 pounds chicken breasts, cut into strips 4 cups vegetable oil 1 teaspoon butter 1 (12 ounce) bottle barbecue sauce In bowl, whisk together eggs, water, milk, 2 teaspoons salt and 2 teaspoons pepper until smooth. In another bowl, combine flour, 1/8 cup salt, 1 tablespoon pepper, garlic and mesquite seasoning. Fill large heavy skillet half full with oil. Heat to 365. Dip chicken into egg mixture, then into flour mixture, back into egg mixture and into flour mixture again. Place coated strips into hot oil to fry. Do not over crowd, just cook in batches. Once chicken is browned on one side, turn, and brown on the other side. Preheat oven to 300. Butter two 9x13 inch glass baking dishes. Pour enough barbecue sauce into dish to coat bottom. Arrange chicken in rows into prepared dish. Pour remaining sauce over top. Bake for 10 to 15 minutes, or until sauce is caramelized.
