Smothered Pork Chops 2 pounds thinly cut pork chops 2 unpeeled lemons, sliced 1 large sweet onion, cut into rings 1 green pepper, cut into rings 1 teaspoon salt 2 cups tomato juice 1 tablespoon butter Wipe chops with damp cloth. Place into large covered skillet. Cover with lemon, onion and peppers. Sprinkle with salt. Add tomato juice. Dot with butter. Cover. Cook for 1 1/2 hours. Makes 6 to 8 servings.
