Salmon Burgers 1 (15 ounce) can salmon, drained, flaked 2 eggs, beaten 1 cup bread crumbs, divided 1/4 cup chopped green onion 2 tablespoons lemon juice 1/8 teaspoon pepper 1 cup vegetable oil In bowl, combine salmon, eggs, 2/3 cup bread crumbs, onions, lemon juice and pepper until well blended. Shape into four 3/4 inch patties. coat with remaining bread crumbs. Place patties onto waxed paper-lined plate. Chill for 1 hour. In skillet, heat oil over medium heat. Add patties.Ccook for 5 minutes per side until browned. Drain on paper towels. Makes 4 servings.
