Stumbling Drunk roast 2 lbs. boneless chuck roast (be sure bone was removed from center of cut) 1 c. Irish Whiskey 3 bell peppers chopped (red, orange, yellow) 1 c. chunked pineapple drained Marinade meat for one day in mixture of pineapple juice and bailey's Line the bottom of your roasting pan with foil. when ready to bake place chopped vegetables and fruit in the lining of your roasting pan. Place meat plus the marinade on top of this layer. Wrap tightly. Pour two cups of water in the pan around the wrapped meat. Bake in 275 (f)degree 135c oven for 8 hours.
