chucky's Delight

2 lbs. boneless chuck roast (be sure bone was removed from center of cut)
1 c. Bailey's Irish cream
3 bell peppers chopped (red, orange, yellow)
1 c. chunked pineapple drained

Marinade meat for one day in mixture of pineapple juice and bailey's
when ready to bake place chopped vegetables and fruit at the bottom of your roasting pan. Place meat plus the marinade ontop of this layer. Bake in 275 degree oven for 8 hours.
