Easy Coconut Cake 1 (18.25 ounce) box white cake mix 1 cup buttermilk 1/4 cup vegetable oil 1 teaspoon coconut extract 2 large egg whites 1 large egg 1/4 cup flaked sweetened coconut 1/4 cup packed light brown sugar Coconut-Cream Cheese Frosting Preheat oven to 350. In bowl, combine cake mix, buttermilk, oil, coconut extract, egg whites and egg. Beat with mixer on low for 30 seconds. Beat on medium for 2 minutes. Pour half of batter into greased and floured 9x13 inch baking pan. Sprinkle with coconut and brown sugar. Top with remaining batter. Bake for 30 minutes, or until toothpick inserted into center comes out clean. Cool completely in pan. Spread with coconut cream cheese frosting
